Origins of Eggnog

eggnog in a bowl and punch cups with candle on red table cloth

If pumpkin spice indicates the beginning of fall, eggnog ushers in the start of the Christmas season. Recipes for the eggy, custardy drink abound, and it can be found as a component of hundreds more. Eggnog waffles, eggnog lattes, eggnog ice cream – it’s almost impossible to celebrate the holidays without eggnog in some form.

Like so many long-standing favorites, it’s not clear where eggnog came from, why it’s called eggnog, or even what ingredients were in the first recipes.

History of Eggnog

two glasses of eggnogWhat culinary historians do know is that in medieval Europe, it was common to find drinks made of warm milk and alcohol, a mixture known as posset. It’s thought that eggnog is a descendent of this early beverage.

Early eggnog almost always included alcohol, and in the newly-formed American colonies, the drink grew to popularity as a heady mix of milk and/or cream, eggs, and rum. Often topped with cinnamon or nutmeg, the drink’s warm spices made it popular in the cold winter months. George Washington himself was known to have written a popular recipe for the beverage.

By the 1800s, eggnog could be found at nearly every holiday party, and regional varieties began to take shape – bourbon replaced rum in the South, for example.

Modern manufacturing relieved home cooks of the long period of beating and mixing required to make eggnog at home, and modern drinkers of the beverage  were able to take to their local store to grab a carton or bottle.

What’s in Eggnog

The basic recipe for eggnog has not changed in a century. Beat egg yolks and sugar together with nutmeg, and then slowly mix this mixture into a pitcher of milk and cream. Historical versions of the drink may well require alcohol, but many modern drinkers take the beverage without any booze at all.

Concerns about food safety led eggnog to fall out of favor somewhat. For home cooks, the easy solution is to make eggnog with pasteurized eggs. Commercial preparations, including our own genuine eggnog, are pasteurized for safety and can be consumed without worry.

Serving Eggnog

Typically, eggnog is served cold, though it’s not uncommon in some areas to find the drink served warm (especially when fortified with rum or bourbon).

We recommend serving it in a chilled punch bowl, ladling up individual servings as necessary, and topping each with a generous grating of nutmeg. For a holiday dinner party, try serving it up in carafes down the center of a long table, or at individual tables.

Recipes with Eggnog

Straight eggnog can be added to coffee and hot chocolate for a warm, spicy kick, but other recipes are also well suited to using the drink as an ingredient. Because eggnog is, in essence, a drinkable custard (a mix of dairy and egg), similarly based recipes can often incorporate eggnog’s signature flavor with ease.

Here are a few ways you can use any leftover ‘nog you might have.

Eggnog Pancakes – Crème de la Crumb

Eggnog Cheesecake – Chowhound

Eggnog French Toast with Gingerbread Syrup – Sugar & Soul

Eggnog Cheesecake

Love it or hate – and there seems to be very little middle ground – eggnog is a signature of the holidays. We’re proud to make and serve genuine, delicious, creamy eggnog, and our famous eggnog ice cream. Come by and grab a holiday treat.

Caramel Delight Cake

This cake fits the ultimate dessert bill–it’s warm, gooey, and topped with chocolate toffee.

Ingredients

  • 1 (15.25 ounce) package German chocolate cake mix with pudding included
  • 1 ¼ cups water
  • ½ cup vegetable oil
  • 3 eggs
  • Homemade whipped cream (We used the recipe included below)
  • 1 (16 ounce) jar Braum’s Caramel Ice Cream Topping
  • 2 large chocolate toffee candy bars, crushed

Instructions

  • Mix and bake German chocolate cake mix according to box instructions.
  • Once the cake has baked, remove from oven and poke holes with the end of a spatula or other utensil.
  • Pour the jar of caramel topping evenly over the top of the cake. Reserve some of the caramel for topping later. Let the cake cool.
  • Once cooled, cover the cake with whipped cream topping. Sprinkle with crushed chocolate toffee candy and place in refrigerator until ready to serve.
  • If desired, drizzle with remaining caramel topping that’s been warmed (use caution if microwaving as jar may become extremely hot).
  • Serve cake with a scoop of your favorite Braum’s Ice Cream or a glass of Braum’s milk.

Homemade Whipped Cream

Ingredients

  • 1 cup of Braum’s Heavy Whipping Cream
  • 1/4 cup of confectioner’s sugar (or to taste)
  • 1 teaspoon of vanilla

Instructions

  • Chill your bowl and whisk (or mixer) in the freezer for about 15 to20 minutes.
  • Once they are very cold to touch, remove them from the freezer. Immediately pour the whipping cream into the bowl and beat on high until stiff peaks are just about to form, about three minutes.
  • Beat in vanilla, egg nog, and sugar until peaks form. Do not overbeat as this will cause the cream to become lumpy. It is best to use the cream within one day.

Walnut and Pear Stuffing

Is there anything more comforting than a side of crispy, hot stuffing? The walnuts in this dish provide a wonderful crunch!

Ingredients

  • 1 pound ground pork stuffing
  • 4 celery ribs, sliced
  • 1 large onion, chopped
  • 1/2 cup Braum’s Butter
  • 2 large green pears, peeled and chopped
  • 4 garlic cloves, minced
  • 1 (16 ounce) day-old Braum’s sourdough bread loaf, cubed
  • 1 cup walnuts, chopped and toasted
  • 1 Tablespoon rubbed sage
  • 2 teaspoons coarsely ground pepper
  • 1  cups chicken or turkey broth

Instructions

  • In a large skillet, brown the sausage, stirring until crumbly. Once cooked, drain and set aside.
  • After cleaning the skillet, sauté celery and onion in butter over medium-high heat until crisp-tender. Add chopped pears and garlic; sauté until pear is tender. Remove mixture from heat.
  • Place bread cubes in a large bowl. Stir in sausage, celery mixture, walnuts, sage, and pepper. Pour broth over stuffing while stirring the mixture gently.
  • Place stuffing in a 9×13 inch lightly-greased or buttered casserole dish. Bake uncovered at 325 degrees for approximately one hour.

Creamy Egg Nog Cupcakes

These rich, egg nog-infused cupcakes are an absolute dream, but be careful! It’s hard not to go back for seconds!

Ingredients

Cupcakes

  • 1 (16 ounce) package pound cake mix
  • 1 ¼ cups Braum’s Egg Nog
  • 2 large eggs
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon vanilla extract

Frosting

  • 1/2 cup Braum’s butter, softened
  • 3 ounces cream cheese, softened
  • 4 cups powdered sugar
  • 1/4 cup Braum’s Egg Nog
  • 1/2 teaspoon nutmeg
  • 1/2 teaspoon vanilla extract

Instructions

  • Preheat your oven to 350 degrees. Combine pound cake mix, egg nog, eggs, nutmeg, and vanilla extract with a mixer at low speed. Once well-combined, increase the mixer’s speed to medium and beat for two minutes.
  • Place baking cups into muffin tins and spoon batter into cups.
  • Bake for 18 to 20 minutes. To test if it is done, insert a tooth pick in the center of a cupcake. If it comes out clean, the cupcakes are done. Transfer to wire rack to cool completely before frosting.
  • To make the frosting, beat the butter and cream cheese with a mixer until creamy. Gradually add powdered sugar and egg nog, alternating between the two. Begin and end with adding sugar. Beat at low speed.
  • Add nutmeg and vanilla extract and beat until smooth. Spread over completely cooled cupcakes with a piping bag or with a frosting knife. Decorate with a sprinkle of nutmeg or colored sugar.

What is Butter Brickle Ice Cream? Everything You Want to Know About the Classic Flavor

$

0

A scoop of Butter Brickle Ice Cream

You know the standard ice flavors. There are the basics like chocolate and vanilla and elevated favorites like Rocky Road. While all flavors are deliciously unique, there’s one ice cream parlor fixture we love for its sweet nostalgia—Butter Brickle.

Butter Brickle is a true golden oldie. Younger generations may not be familiar with the classic flavor, but that doesn’t mean they have to miss out. We’re breaking down everything you want to know about this retro favorite.

The History of Butter Brickle

Before we had the ice cream, we had Butter Brickle candy. The Fenn Bros. Ice Cream and Candy Company in Sioux Falls, South Dakota was a manufacturer that doled out sweet treats as early as 1918. The brand is recognized for the invention of Butter Brickle candy and ice cream flavoring.

Though the Fenn Bros. are credited with inventing Butter Brickle, it originated in Omaha, Nebraska. Omaha’s Blackstone Hotel is thought to be where the ice cream was debuted to the public in the 1920s.

The Fenn Bros. continued manufacturing Butter Brickle candy and flavoring until the 1970s, which is when the company liquidated. The Butter Brickle formula was sold to the company Leaf, Inc., which manufactured Heath Bars. In 1996, Hershey acquired the formula and trademark.

What Does Butter Brickle Taste Like?

Traditional Butter Brickle is made of small, crunchy pieces of golden-browned toffee. It’s buttery and sweet tasting. If you’re a fan of Heath bars, which are made of toffee covered in a silky chocolate layer, you may love Butter Brickle too!

Butter Brickle tastes incredible in more than just ice cream. Just scan online recipes to see cakes, frosting, pies, cookies, and treat bars inspired by the flavor.

Where Can I Buy Butter Brickle Ice Cream?

Are you a Butter Brickle fanatic craving nostalgia or even a total newbie to the flavor? You’re in luck. Braum’s churns out its version of the beautiful flavor on a regular basis. Braum’s Premium Butter Brickle Ice Cream features delightfully buttery toffee pieces and smooth vanilla flavoring.

Be sure to look for it in the Braum’s Fresh Market!

Braum’s Take on Butter Brickle

If you grab a pint of Braum’s Butter Brickle, take along a few extra fixings to elevate the classic. We suggest putting a scoop or two in a bowl. Drizzle it with warm fudge topping and sprinkle with crushed toffee or Heath bars. Finish with a generous dollop of whipped cream and top with a cherry!

Braum's Greek Yogurt containers on display at the Braum's Fresh market

Are you going Greek? Greek yogurt, that is.

This healthier alternative to traditional yogurt is deliciously tart and tangy. With less sugar and more protein than regular yogurt, it’s a great tasting snack or meal option that’s good for you too!

Braum’s introduces its take on Greek yogurt–available at the Fresh Market and as a fry alternative on Braum’s meal combos.

What is Greek Yogurt?

What makes yogurt Greek? It’s all in the process. Essentially, Greek yogurt is strained yogurt. Regular yogurt and Greek yogurt start out the same–milk is heated to an ideal temperature for fermentation. Bacterial cultures are then added to the milk and the mixture ferments.

During fermentation, bacteria grows and produces lactic acids. This causes the milk to gel, making yogurt. If making Greek yogurt, this mixture is strained to remove liquid whey and lactose. This creates the thick texture.

Beyond texture, Greek yogurt differs from regular yogurt in protein, fat, and carbs. Greek yogurt has nearly twice the amount of protein found in regular yogurt and about half the amount of carbs. Full-fat versions of Greek yogurt are higher in saturated fats compared to regular yogurt.

Health Benefits of Greek Yogurt

As we mentioned, Greek yogurt packs a ton of protein, roughly 12 to 15 grams per recommended serving. This means it will leave you feeling fuller longer than an empty carb-heavy snack. That wallop of protein can help support the strengthening of bones and muscle. All that protein makes it a great pre- and post-workout snack.

Not to be outshined by impressive protein, the probiotics naturally found in Greek yogurt can help support your immune system and aid digestion. The probiotics are the “good bacteria” needed by your body’s digestive system to function properly.

Calcium is another nutrient sufficiently found in Greek yogurt. Nearly 20 percent of your daily recommended value of calcium is in one serving of Greek yogurt. Calcium is needed to help build muscles and support organ function. Calcium is especially important for growing youngsters–since Greek yogurt is easy to sneak into other foods, like fruit smoothies, it’s easy to make sure kids get the calcium they need.

Vitamin B-12 and potassium are also found in Greek yogurt. Potassium can help lower blood pressure and even prevent cramps. B-12 supports brain and DNA functions and is typically found in animal products like meat and fish, but vegetarians can use Greek yogurt as a meatless B-12 source. Over 20 percent of the recommended daily value of B-12 is found in one serving of Greek yogurt.

Greek yogurt is also more acidic than regular yogurt, meaning its nutrients are easier for your body to absorb. Because of its texture and tart flavor, Greek yogurt is a healthy ingredient swap for sour cream and mayonnaise. A healthy swap can help incorporate more vital nutrients into your diet. Try it over a baked sweet potato or top your favorite chili recipe with a spoonful! Blend it into your morning smoothies or have a bowl of Greek yogurt with fresh fruit, nuts, and seeds for a healthy breakfast.

Customize Your Braum’s Combo with Greek Yogurt

Your Braum’s meal is customizable. If you’re watching carbs, swapping fries for a protein-packed Greek yogurt is a great option. If you’re a morning person, swap out your hash browns for Greek yogurt on your breakfast burrito combo. The high protein breakfast will leave you satisfied all morning!
